German White - Porcelain Variety
A very vigorous variety, well adapted to the cold New York winters. First variety to emerge in the spring and the tallest variety we grow. Moderate spicey flavor raw that mellows when cooked. 4 to 5 huge cloves per head. Excellent when roasted.

Spanish Roja - Rocambole
A more compact plant than the Porcelain types but a stronger grower. Probably the most popular hardneck type, because most garlic lovers find the flavor to be 'true garlic'. A Northwest heirloom that was reported to have been brought into Northwest Oregon before 1900, it is often called Greek garlic by home gardeners throughout the region.

Most bulbs are not as large as Music, but it has more cloves per bulb. Each clove is fairly large, and easy to peel. It is an excellent keeper. Bulbs will stay firm into June most years, if stored under ideal conditions, which means "cool and dry"
